Our Food

We are delighted that the talented and experienced chef Mathew De Franco has joined us at Duntrune House and will take over the preparation and serving of dinners. Mathew is an award-winning chef, who was executive chef for Albert Roux and premier sous chef at The Dorchester London, Boca Raton Resort and Club Florida, the Royal Motor Yacht Club Sydney, as well as in three of the top hotels in Scotland - Gleneagles, the Old Course and Turnberry. After his world travels, Mathew returned to his birthplace of Broughty Ferry, ready for different challenges. We are lucky to have such a gifted chef to enhance both The Duntrune Experience and The Real Retreat.

We promise you that you will love Mathew’s food cooked with imagination, beautifully presented and served by him. His menus range from the simple to the sophisticated using local produce, and vegetables and fruit in season from our garden.  Mathew is happy to come up with interesting and appetising dishes for any special dietary requirements.

Mathew presents a 3-course set dinner menu for our guests. Depending on the season, the menu could be:

chicken liver pate with sweet and sour pineapple sauce

Melba toast, plus chicken-liver pate, with a sweet and sour pineapple sauce and dressed salad.

The vegetarian option - a courgette terrine with dressed salad.

  followed by...
Pan-fried fillet of pork served with mixed peppers

Pan-fried fillet of pork served with mixed peppers in a white wine cream sauce and crushed potatoes in vegetables.

The vegetrian option - roasted vegetable tart with a selection of vegetables.

 

  or he might opt for....
Slow-cooked breast of duck caramelised,

Slow-cooked breast of duck caramelised, and creamed potatoes, with wild garlic from our garden

  or he could prepare.........
Breast of chikden with olive oil mash

Crisp breast of chicken, served with olive oil mash and home-grown tomatoes and spinach.

  And to finish.......
Creme brule with Duntrune Raspberries Crème brulé with fresh Duntrune raspberries, topped with caramel.

The price for this is just £27.50 per person.
Special occasions: Do you have a special occasion coming up soon? Mathew can – in consultation with you – devise a memorable 6-course dinner for £45 per person. This is for both residents and non-residents.

Cookery short breaks:  We are cooking up some ideas for a themed short break with the focus on cooking.  The menu will feature lots of hot tips from Matt's culinary experience.  Cook and enjoy the results! These will be available from the autumn.  Keep an eye on our News page for what and when!
